Molten Deep Dish Chocolate Chip Muffins

Well back to school and back to our humdrum apartment and humdrum lighting and my humdrum camera. But I am experimenting today! I found an awesome program like instagram, but for the computer, and tried it out on my pictures. I am WAAAAY happier with the results than with the originals, at least they look interesting! So you will all have to let me know what you think about my old-fashioned looking pictures, I'm thinking about converting all of the pictures on the site.
So I hope everyone is having a great new year. With a new job, and 15 credits I am busier than I ever have been! We have also been working out every day. woohoo. With all of my fitness/nutrition classes this semester I figured I better work a little harder. So even though today's recipe won't help with those skinny new years resolutions, it only makes 12 cookies, so make them, give them away (maybe to someone who you hope fails their new years resolution...wait...who could be that mean?? =] ), but you have to eat at least one...then go work out!
Annyyway. ms. Cookies and Cups strikes again. I love that site! She posted these Volcano Cookies a couple weeks ago and I immediately tried it, but with a Desperate Chefwife twist. She uses a muffin-top pan, and I used a regular muffin pan (deep dish cookies....yesss). Also she used dove chocolates for the middle, and this time I used caramel kisses! You could really use any candy you want, I actually made these again and did a big pile of chocolate chips in the middle and they were still good! This is a great way to make fail-proof cookies. Because they are in the muffin pan, they can't spread cracker-thin or burn on the bottom.


1 Cup butter, room temperature
1 Cup brown sugar
1/2 Cup sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
3/4 tsp salt
2 1/2 Cups flour
1-1/2 cups chocolate chips
Candy or extra chocolate chips for the middles (I used caramel kisses)
Preheat oven to 350 degrees
Spray a muffin pan with pam and set aside

With your beaters, or with a stand mixer, beat butter, brown sugar, and sugar until light and fluffy.
Add vanilla and eggs (one at a time) and mix until just combined (you don't want to whip the eggs)
Mix in the baking soda, salt, and flour, adding 1/2 cup at a time (you might need a little extra flour, I needed 1/4 cup extra, my dough just seemed a little runny), then stir in chocolate chips.
Spoon about 1/4 cup of dough into sprayed muffin tin
Place candy filling in each cup (I used 2 kisses per cookie, or you could use like 8 chocolate chips). Look how cute!!
Then cover your filling with 1/8 cup more dough.
Cook 12-15 minutes, until edges are risen and golden and insides are just a little mushy
Remove from oven and let them sit in the pan for about 10 minutes.
Carefully remove from the cups with a spoon.
Serve with a tall glass of milk, and possibly a scoop of ice cream
