I love camping. One of the reasons I love it so much is because of s'mores! (I haven't had anything yet so how can I have some more of nothing? =] ) I'm the girl that likes the ratio of chocolate to marshmallow at about 2:1, and the chocolate has to be a little bit melty, so I have to heat it up next to the fire before adding my marshmallow, which cannot be burnt at all. So these bars really help me in the dead of winter when I want a s'more. Plus, even though my husband was skeptical the first time I made these, they are one of his favorites now, and he loves to help me!
Also, I usually half this recipe, 2 pans is just enough way too much for 2 people! But here is the full recipe, which is good for big events, and you can cook them at the same time!
11 tablespoons butter, softened
1 Cup brown sugar
1/2 cup sugar
2 eggs (always use large, that's what every recipe is scaled for!)
1 1/2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 1/2 Cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
3 regular sized hershey's bars
2 packages of cinnamon graham crackers (regular would be fine too, but we like the cinnamon!)
Preheat oven to 375
Line two 9x13 pans with parchment paper, then line up graham crackers side by side, as close as possible, remember to break them into squares, don't just leave them as big rectangles. As you can see, I had to do little pieces on the ends because a whole one wouldn't fit, that's fine.
Set graham crackered pans aside and get out your mixing bowls. You know the drill, in one bowl mix together the salt, baking soda, cinnamon, and flour, set aside. (I bolded that cinnamon because I forgot it the first time I made it, it's not usually in my cookies!) In another bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla, then slowly add dry ingredients. Last, stir in chocolate chips and marshmallows (careful not to smoosh them!)
Then take a melon scooper (or just a ghetto spoon if you are me), and spoon about 1 1/2 Tablespoons of dough on each graham cracker square like sooo.... (yours will look so much prettier if you own a little scoop!)
Pop the pans in the oven for about 5 minutes, then pull them out. They will look like this
Now for the Hershey's bars! Break them up into their individual little Hershey's rectangles, and push one into every cookie, this is my favorite part, I think they look so cute!
Put them back in the oven 5-7 minutes more until the edges are golden brown. But look you can even see how they still say Hersheys! When they cool they will look like you never even cooked them!
Let them cool COMPLETELY (trust me, these will just fall apart if you cut them when they are warm, plus this lets the chocolate get solid again, and it is so yummy!), then cut them up more or less on the graham cracker lines, and serve. Look at how that marshmallow got all toasty in the oven, not a hint of burning!
