Here's the only hitch...my pictures for this one suck, like more than usual (i'm not much of a photographer), my camera died right in the middle of making this, so I had to use my husbands, and half of the pictures are blurry, so I apologize! (exhibit a...)
-4 premade 1/4 lb turkey burgers, thawed (the ones you buy in the frozen foods in a pack of like 16)
-3 TBL diced onions
-1 Cup fresh baby spinach, chopped
-1 large egg
-1/2 Cup oats
-1/4 Cup dried breadcrumbs
-3 oz soft goat cheese
-1 TBL Garlic salt
-1/2 TBL lemon pepper seasoning
-hamburger buns, or iceburg lettuce for lettuce wrapped burgers.
Preheat oven to "broil" and line a cookie sheet with foil
In a small pan drizzle a little olive oil, then saute onions until brown, look at my awesome trick. I bought an onion last week and chopped it up right when I got home from the store, and put it in the freezer, it saves so much time, and saves me from throwing away unused onion!
then add the chopped spinach, until wilted evenly. Remove from heat (to make sure it is cool, I put mine back in a bowl and set it in the freezer)
In a medium bowl, set the 4 patties, egg, oats, breadcrumbs, garlic salt, and lemon pepper
Then crumble 2 oz of the goat cheese on top
Then grab your spinach/onion mixture, making sure it's relatively cool, you don't want it to melt the cheese or cook the egg
Then using your hands, mix alllll the stuff together, oh cooking is so fun, then shape into 6 patties and set them on your foil lined pan, squishing in the middle a little, so the patties are the shape of a blood cell (hehe, isn't that the funniest comparison? I heard it on the food network once...but it's true! this is so the middle and the edges finish at the same time)
Pop the pan in the oven for 8 minutes. Remove from oven and flip over with a spatula, then return to the oven for 8 minutes, until the edges are just a little brown and crispy
When ready to serve, spread a little of the left over goat cheese on top if you'd like. Then, you can put them on buns, or lettuce wraps, and put any toppings you'd like, we like tomatoes and pickles. After my first I literally just spread goat cheese on a patty and ate it totally plain, and it was divine. Happy eating!
