Mud Puddles (No bake Cookies!)

I have made mud puddles since I was little. They are so easy, and fast, and deliciousssss. I love oatmeal, and you can add more or less depending on how much you like. Because of all the oats in these little cookies, they pack a lot of energy, oh and you're going to want to have milk on hand for these babies!


2 C Sugar
4 T cocoa
1 Stick butter/margarine
1/2 C milk
1 C peanut butter
1 T vanilla
3 or 4 C oatmeal
waxed/parchment paper

-In a saucepan on the stove over medium heat, mix sugar, cocoa, butter, and milk, stir constantly until butter is melted, and everything is mixed together
-continue to stir until the mixture starts to boil, then boil it for exactly 1 MINUTE! this is important!
-after the 1 minute, remove from heat, and add the peanut butter and vanilla, and stir until nice and melted **I hate measuring out peanut butter, because it gets all over and is so hard to clean, but spray your measuring cup with pam before you measure, and it comes right out nice and clean...it's great!!**
-then add the oats and stir to combine
-cover a cookie sheet in wax or parchment paper, and drop dough by rounded Tablespoons (or 1/8 C if you are like the Thomas' and like big cookies =] )
-pop the tray in the freezer and let set for like 30 minutes....enjoy!
*This was about .5 seconds after I took them out of the freezer...they're disappearing!
